Fixings

  • 2 eggplants
  • 1 glass cooked rice
  • 1 yellow onion (finely slashed)
  • 3 garlic cloves
  • 1 Tbsp tomato glue
  • 2 Tbsp crisp parsley (minced)
  • 2 tomatoes (cut into 12 cuts)
  • Fit salt (to taste)
  • Ground dark pepper (to taste)
  • 6 Tbsp olive oil (in addition to additional as required)

Guidelines

  1. Preheat broiler to 400F.
  2. Flush the eggplants, cut off stems and chop down the middle the long way. Sprinkle with salt generously and put aside.
  3. In a vast non-stick griddle, heat 2 tablespoons of olive oil over medium warmth. Sear the eggplant parts, two at any given moment, on the two sides, turning about at regular intervals, until dim brilliant darker.
  4. Include more oil as you are singing the eggplant as they will, in general, absorb it. You need the griddle to have some oil on the base. In the event that you see that it looks dry, it's a decent time to include somewhat more oil.
  5. Expel the eggplant from the skillet and exchange to a heating sheet or a preparing dish, cut side up. Sprinkle some increasingly salt over the highest point of the eggplant parts. On the off chance that you don't, they will taste a little under-salted.
  6. In a similar skillet, dark colored the onion over medium-high warmth until brilliant darker. Include the rice, parsley, tomato glue and blend well. Cook for one more moment every now and again mix. Season with salt and pepper to taste. Expel from warmth, exchange the blend to a bowl and let chill off.
  7. Spread rice and onion blend over the eggplant pieces, pushing down delicately to make it stick.
  8. Top each singed eggplant half with 3 tomato cuts. Shower with a tad of olive oil.
  9. Move the eggplant into the stove and prepare for 25 minutes.
  10. Expel from the stove, shower with some progressively olive oil, and sprinkle with a tad of salt and pepper. Brimming with crisp parsley as well as coriander and serve.
